Great!!! I love pasta and have avoided it for years until recently. My dad was Italian so it seemed sad to never eat it again but i look for pasta made in Italy and eat it for a special occasion. Their products are much better than ours.

If you can find chickpeas pasta in your country. Maybe you can give it a try. According to Justin who did the test, it doesn’t spike as much as normal and wheat pasta. I don’t have a chance to try since chickpeas pasta is not available here.
@ChuChuAndAhBathanks but i just don’t like substitute things for pasta. But this idea might be good for someone else. I’m also not diabetic so it’s not vital for me. I am only having real Italian pasta on occasion and try to have a small serving. It’s delightful!
If you decide to include pasta into your diet, don’t go crazy.
I think it’s good to know this. I’m not a purist. Every once in a while, I’m gonna eat some carbs. But to know what carbs are at least better is helpful.
With your advice, I have managed to teach many diabetics in my country. Many of as are free diabetic now. Kudos Dr. Fung 🙏
Is food combining a factor also? If you pair white rice with vegetables, does that help because of the fiber?

White bread spikes my blood glucose by almost as much as cake.
Crazy because it is basically cake without added cane sugar

What about bread you make yourself with fresh grain you have just milled in to flour?
Depends on the coarseness of milling and with what you eat it with

Choose pasta or low- glycemic index rice over white bread
Does this apply to sourdough as well? I make my own at home and allow for extensive fermentation time
