    1. Keto indeed minimizes simple carbs. Because I walk 3 miles’ per day olus do some light physical work as a job part-time I find I need carbs for energy or get too hungry. So I have oat cakes & chickpea flour pancakes (not allowed on strict keto), but don’t have

      bread rice pasta sugary treats (v often!), milled products (save fora few oat crackers a day,which i have with fat (cheese))

  2. Insulin may spike, but perhaps it declines quickly as the starch is digested. Doesn’t the total area under the insulin-time curve matter more than the slope of the spike? Please tell us the whole story, it’s misleading without that. Also, if fasting, the stored fat is taken out again and metabolized during the fasting period, isnt it? That’s how one can lose weight without the drudgery of food restrictions. Please tell us the whole story.
