    As long as the peak isn’t real high should be ok. Beans can be good, but only 1/4 cup. Plus if only eating one or 2 meals, glucose has time to go down! Right?

      Just “not real high” doesn’t seem like a good guide for keeping your feet, eyes, kidneys, and heart healthy.

      Dennis’s suggestion to keep your BG under 130, at the highest, all day long seems like a better recipe.

    Thanks Dennis! (I beat diabetes before Thanksgiving, because I was getting ready for surgery 😄)

    I saw my primary care doctor this past week, & he asked “How did you do this?” – I told him it was mostly diet, although I did up my exercise a little, but primarily it was dietary intervention on my part. Thankfully, he was on board fully, and although I’m due for shoulder surgery (injury, not diabetic related) in a few days, he was happy to assist me with a glucose tolerance test & a Kraft test – 3-5 months after I recover from the surgery to check my progress toward “Optimal”, not just “Normal”, even though they don’t normally bother testing insulin response if they don’t suspect type 1 diabetes. I’m happy that I now have a really GOOD doctor!

    Beans and legumes are one of the healthiest foods though! You should try to have some every day. The lowest carb ones include soybeans, edamame, string beans, peanuts, peas, lentils, chick peas, and black beans.

    Baseculture is the best bread ive found. In the frozen section. You have to toast each piece but its clean.

    My highest glucose is in the morning, totally fasted, 2 to 3 hours after I get up. Eat a carnivore meal in the early evening, my BG almost always goes down. Eat rice or similar, BG spikes over 200.
    When you peak after a meal depends on how insulin resistant you are as well as what you eat. See videos about the work of Dr Joseph Kraft.
    I doubt the vegetarian’s belly was skinny.
