Recipe for Low-Carb Muffins:

In a bowl mix these wet ingredients
1. Crack 3 eggs and stir thoroughly.
2. Add ½ cup heavy cream.
3. Add ½ cup water.
4. Stir the cream, and the water with the eggs.

In a separate bowl mix these dry ingredients:
5. Add about 1 TBSP of Xanthan gum
6. Add ½ TSP of baking powder
7. Add ½ cup Swerve or your choice of non-sugar sweeteners.
8. Add ½ cup of almond flour and ½ cup of coconut flour.
9. Stir the mix thoroughly.

Now mix the wet and dry ingredients and stir well, making a dough.
Bake the muffins at about 375 degrees for about 25 minutes, depending on how hot your oven heats, and how dry or moist you like your muffins.
When you bring the muffins out of the oven, resist the temptation to take them out of your pan immediately. Let them cool for about 40 minutes, and they will come out more easily and be a bit firmer.

    1. I was busy this week, needing a car repair, and then our air conditioning went out Wednesday night. Here in TX, in July, that is a disaster! So while I was working on this video last night, when it got to around midnight, I went to bed and finished it up this morning. That’s why the delayed notification.

  1. My variation. I mix the dry ingredients for your basic Mug Cake together in a small cereal bowl and stir. I don’t use xanthan gum. After stirring, I plop in all the wet ingredients on top of the dry (for lunch today I also added 1 TBS lemon juice and some poppy seeds), then stir it all together. It doesn’t seem lumpy to me. Microwave 90 sec. Fills the bowl for a single serving. Then I eat with the tablespoon I used for the dry ingredients in the bowl I mixed it in. Only 1 bowl and 1 spoon to wash. I don’t know if it is crumbly since I eat it right out of the bowl, but it is good! No leftovers. It’s not that hard to make whenever I want some. Thanks, Dennis!

  2. Master Chef tip #3: Go with great healthy foods that are simple and don’t need a recipe! Like… fried eggs? Fried ground beef? Good sardines (okay, harder to find) with salt on top. Very healthy stuff! Keep it simple!

    Tips on cooking muffins to Beat Diabetes:
    1. Baking powder helps to make food rise 💃 2. Xanthan gum helps to bind ingredients 💃 3. Mix dry ingredients together and then mix wet ingredients before combining the two 💃 4.   4. For me, I find it better to make an individual microwave mug cake, simply because if I have a batch of something I will eat more of them, even if I freeze them.

  5. I would add a tsp of vanilla to your wet ingredients. It would add a lovely taste to your basic muffin recipe. ❤

  7. Well gee…I just made this recipe tonight. Since I’m fasting, I had my husband try it. He says it wasn’t sweet enough? I thought 1/2 cup keto sweetener was too much initially. I saw some of the other comments about adding vanilla extract. Maybe I’ll try that next time. I’ll try one tomorrow and see how it tastes. My husband eats “normal food.” Lol
