Basic Mug Cake Recipe:
in dry bowl mix:
3 tbsp almond flour
2 tbsp coconut flour
1/2 – 1 tsp baking powder
2-3 packets of non-sugar sweetener

In another bowl mix wet ingredients:
1 blended egg
2 tbsp heavy cream
2 tbsp olive oil or coconut oil
1 tsp of vanilla extract (optional)

Blend the wet ingredients with the dry
Pour into a wide mug or ramekin
Microwave for about 90 seconds
Done!

  1. I’m not a fan of whipped cream but I am a fan of strawberries and strawberry shortcake! Would it work to put a small amount of granular stevia on strawberries to make them juicy like you do with sugar?

  2. There may be an ERROR in the recipe given. I use 1 tablespoon of coconut flour OR 3 tablespoons of almond flour for a mug cake AND only 1/4 teaspoon of baking powder, with 1 to 2 tablespoons melted butter and about 1 1/2 tablespoons of sweetener + 1 egg

  3. Since I can’t find sugar free whipped cream in my local grocery stores I make my own. It goes well with berries, sliced almonds, cinnamon, chocolate and coffee. Definitely worth figuring out.😋

  4. Hey Dennis and thanks for the information in this video – very very useful and informative to say the least.
    As this video is about a ‘Perfect Dessert for Diabetics’, I think I have recently discovered a ‘Perfect Drink for Diabetics’ – well, at least for me.
    It’s very simple – Coke Zero + Apple Cider Vinegar
    As you know Zero doesn’t contain sugar or chemicals that cause sugar spikes. The sweet taste comes from aspartame which is another chemical and too much of it can’t be good for you – fair enough.

    Now when you add two spooful’s of ACV to a glass of Zero plus ice, you get this sweet/sour/tangy taste, and I must say I love it.
    Especially this summer, we’re having a long and hot summer where I reside and a glass or two of the above concoction per day goes down very well.

    The trick is before trying this drink if you ever get the chance to do it, think of it as a totally brand new drink with no preconceptions as how it’s gonna taste 🙂

  6. Great ideas, Dennis! For salads I highly recommend Skinnygirl Poppyseed dressing. One of the few things I have never tired of!
