Perfect Keto Blackberry Jam – Won’t Spike Glucose

Recipe:

To a medium pan, add 1 cup of water
Mix in 1 tablespoon of lemon juice
Whisk well
Set stove heat to med-high
When water is hot add 2/3 cup allulose, whisk well
Add 12 ounces of black berries
Either mash the blackberries or use an immersion blender
Let mixture come to a low boil and keep it there for ten minutes
After 10 minutes remove the pan to a cool burner
Immediately pour in 1/2 tablespoon of xanthan gum
whisk vigorously until all is mixed well
Let the mixture sit for about ten minutes to cool a bit
Pour into a good sized jar with a lid and put in fridge.
Should be ready to use in four to six hours
Note: when making strawberry jam, I put the strawberries in an electric chopper and mixed them up well. (immersion blender wouldn't work too well with strawberries)

  5. Smacker jam contains maltodextrin which is a hidden sugar alcohol that is higher in glycerin index then sugar it’s hidden in alot of sugar free items love your videos it gives us all a little more to look for having diabetes thank you and God bless

Here’s the take on sugar in my opinion is that they put sugar in everything to give it flavor and that’s just the addiction talking so when you cut out sugar in these jams you’re actually getting the flavor of the fruit and not masked buying abundance of sugar. Now I’m kind of against soy or flaxseed products but I do like the idea of coconut flour and I’m going to look into that because I got on a carnivore diet and lost quite a bit of weight from 420 lb down to 325 and I want to continue losing but I want to enjoy a little bit of toast and jam and I do have blackberry plants that produce every year so I want to be able to make a nice treat but I can have with butter and some kind of a toast to go with my eggs which I eat everyday I got several chickens and they give me plenty of eggs and I eat other meats and butter and it appears by my research that this artificial sweetener that you use does not Spike insulin. So I’m going to give it a try. And I don’t want to think that I’m going on a keto diet so I’ll just call it safe carnivore cheats.
