Recipe for the Mug Muffin:
To make this sweet but simple keto muffin, first mix your dry ingredients. Start with 2 tablespoons of almond flour. Then add 2 tablespoons of coconut flour. Now add 1.5 to 2 tablespoons of your favorite non-sugar sweetener, I used Monk Fruit. Then add ½ teaspoon of baking powder.
In a separate bowl crack 1 egg and blend thoroughly. Now pour in 2 tablespoons of heavy cream. Then add 2 tablespoons of olive oil or melted coconut oil. Mix everything together and then pour the wet ingredients into the dry ingredients and mix well. Once you have a batter, add it to a ramekin or a large wide mug sprayed with cooking spray, and microwave for 90 to 95 seconds.
Now it's time to make your syrup. Cut off 1 tablespoon of butter into pieces and add to a microwave safe mug. Then add a couple of squirts of sugar free coffee syrup or one tablespoon of sugar-free pancake syrup. Microwave the mixture for about 30 seconds.

I have been using allulose, stevia, monk fruit and a small amount of honey to sweeten my green tea for years…. the result is a low carb sweet tea which has 17 carbs per gallon. I will put this tea up for a taste test with any sugar sweetened tea anytime.. I have not gone there with desserts yet….but with all the recipes on youtube….I expect I will.
I only use a combination of Allulose & Stevia mix. Stevia is far too sweet and getting it right can be difficult. Allulose is not sweet enough. Putting approximately a teaspoon of Stevia to 3 desertspoons of Allulose gives a good easy method to measure. It all depends how sweet you want it what ratio you use.
I then add to the mix whatever is needed after my first drink of coffee.
USE A FROZEN BOWL AND PUT IN WHIPPED CREAM WITH GENEROUS SPRINKLES OF CINNAMON , , MAYBE , BERRIES , PUT IN FREEZER AND HAVE AS ICE CREAM 😊❤

“People tend to believe what they want to believe” … Never a truer statement ❤ Some in keto/carn/ low carb believe that “any sweet taste” hitting their tongue triggers their carb addiction and causes them to go off rails. Maybe that is true FOR THEM. It is not true for me but if I believed that was true … maybe then it would be true for me (or an excuse I could use to “drive into the ditch”) 🤣
🥱Good morning! Someone is up early!😁 I use keto sweeteners when necessary ( I like allulose because my sugar takes a dip afterwards). Use SF jello and make flaxseed muffins(flavored with SF Alpine apple cider powder packets). I even make little fruit pies with flour/cream cheese/butter dough using low carb Pie filling-I keep my sugars in the 5’s for the past 6 years, no meds. When I do eat these treats I usually eat high protein/high fat first then the treat. Blessings to all here❤

Some folks have a bias against non sugar sweeteners. But, there also natural occurring sweeteners. Sugar is the one villain we know is horrible! Per Dennis, be conservative with your desserts. Dennis keeps his desserts on the small size 2 or 3 times per week and demonstrated his dessert size by making a mug-size muffin topped with pecand and whipped cream. Lots of YUM! Thanks, Dennis!
