    I do OK with the “zero” carb small tortilla wraps. I use them to make sandwiches. Sometimes I put them in the toaster oven to firmthem up a bit, but I’ve learned the sandwich is fine without that step.

    Dennis & Benedicta,
    There is a low carb hybrid style rice called Liviva *DRIED* shirataki rice. It is very easy to cook just equal parts water to rice, butter & salt and microwave and cover. It is sooooooo tasty like basmati rice. Not sure the effects on blood sugar as my meter needs replacing. I have made a jollof style rice with it by adding the cooked “rice” to the Nigerian stew sauce and my husband thought it was the real deal.

    Dennis I followed your advise on meals when I got diabetes in 2020. I reversed my Hba1c 5.5 but later I went carnivore for 1 year and 6 months and when I tested my Hba1c it was very high 7.4 though I felt good healthy and energetic. I am now back to keto

    It would be interesting to see how consuming protein first would affect the results, say, 3 eggs and then the breads.

    The reason Ben didn’t spike as high is because she usually eats more carbs over time compared to Dennis and that “trains” her body to secrete insulin faster and more efficiently. However, since Dennis rarely ever eats many carbs, his body doesn’t expect them, and it is slower to produce the insulin and then overshoots the amount needed. That’s why he gets higher highs and lower lows than Ben.
