Basic Mug Cake Recipe:
Ingredients
• 2 super-heaping tablespoons almond flour
• 2 super-heaping tablespoons coconut flour
• 1/2 teaspoon baking powder
• 1/8 teaspoon salt
• 1 large egg
• 2 tablespoons coconut oil (melted), or olive oil
• 2 tablespoons of heavy cream
• 1 packet of Stevia
• 1/2 tsp of vanilla extract, fake vanilla extract, or orange extract

Mix in a bowl, (mix wet ingredients first, then mix in the dry ingredients), then transfer the mixture into a large mug sprayed with cooking oil (olive oil preferably) or greased with butter. Cook in microwave for 90 seconds.

    As a type 1 diabetic I can say one of the reasons it may have gone down is that amount of food is quite small. Just not a lot of food. For a meal. But I am going to get some lupin flour and try this!

    My experience with Stelo was also negative with the first unit, It read significantly higher than either of my trusty meters for several days. It did settle in a little by day 5, but never read as low as the metersl then it crapped out several days before its expected life span, I may try the other unit, I may not,. Maybe a competitor will make a better product,.

    My ues of ramikins is for an old traditional desert, egg custard. Of course, I skip the sugar and I even like it if I skip the non sugar sweeteners. Keto recipie on YT very simple and virtually no rise in post prandial reading. Its a desert that can be a meal.

    Those with peanut allergies probably already know, but just in case there is significant cross reaction between peanuts and lupin.

    My Stelo read 20 points lower for the entire month. But it did show me what was going on with my glucose levels which was invaluable.
    Can this muffin be baked? I haven’t used a microwave for years.

    My freestyle libre 3 is a game changer but if its malfunctioning I just request a replacement. Being 20 -30 points off beggs for improvement. If its compressed say while sleeping it can give false readings so positioning is key.
