Einkorn / Almond Flour Pancakes
DRY INGREDIENTS:
1/3 cup einkorn flour
1/3 cup almond flour
1 tbsp coconut flour
1/2 tsp baking powder
2 or 3 packets of non-sugar sweetener (stevia, monk fruit, erythritol…)

WET INGREDIENTS:
2 eggs – blend
1/3 cup heavy cream
1/3 cup water

– Mix the wet and dry ingredients together and cook as normal pancakes.

    1. Neither do I. But I do agree that einkorn is better than modern wheat. Nevertheless it still doesn’t have anything in it that benefits me. Almond flour is much healthier.

    2. @kinpatuMY gripe. His Inuit or whatever it is called made me deathly ill, and his staff literally LAUGHED at me when I called them. THUS, thinking they were correct, I CONTINUED using it…..and CONTINUED BEING as sick as a dog ! My other negative on him was his saying NOT to use Berberine. Well, very specific brands of Berberine is ALL that helps me. Nooooo, I want NOTHING to do with that man.

    3. @carolcole570The low carb space is full of grifters. So are all the dietary camps, but low carb is especially susceptible.

    4. @kinpatuSince I also have ” Non Alcoholic Cirrhosis of my Liver “, eating low carb along with I.F. is the ONLY thing that has healed my liver scaring. It has not helped my diabetes very much, so I continually struggle, but I am dependent on keto and I.F…….FOR my liver.

    5. @carolcole570Low carb is the only dietary pattern I’ve found that keep me weight stable (BMI 22) and optimizes blood panels. I’ve done keto a few times, but I found low carb is sufficient for me.

  4. Einkorn barely have any gluten at all. What there is is also very weak. Not fun to bake with but better for you…..

    1. Question: would buckwheat be even better for you? Buckwheat (despite the name) is not wheat and it’s not a grain.

  5. How does your digestive system function? And stop & think, even organic has had exposure to a multitude chemicals we just can’t assimilate.

  6. Can we go down yet another rabbit hole: buckwheat. Buckwheat (which isn’t wheat/grain) does not contain any gluten. It’s related to the rhubarb plant. It does contain plenty of carbs. Just how much would the glucose spike be there?
