Einkorn Pancakes:

For your dry ingredients, start with 1.5 cups of Einkorn wheat flour, add .5 teaspoon of salt; then add 2 teaspoons of baking powder. Blend these together very well, and then set aside.
For your wet ingredients, blend 2 eggs, then pour in 1.5 cups of heavy cream style milk, which means 1/3 part heavy cream and 2/3 part water.
Pour the liquid mixture into the dry mixture. I added a couple of tablespoons of monk fruit to make the pancakes a little bit sweet. Mix everything together, and keep mixing until what you have resembles pancake batter, which is exactly what it is.
Let it sit out for about 5 minutes to thicken a bit.
Spray your pan or griddle with cooking spray, and then pour out your pancakes in the size you desire. Wait until you see those mature bubbles, flip the pancakes on the other side, and well, you know the drill. Make yourself some golden pancakes and enjoy.

  2. if you repeat the test, test again after another 30-60 minutes, some things cause a delayed rise. Thanks for the video!

  3. I love pancakes, got to try some of that flour. I use almond flour, and along with some sausage links or patties, my glucose doesn’t raise at all. Sometimes even goes down a few.

  4. Thanks for the video, Dennis! You demonstrated how these two foods affected your blood sugar levels. I was surprised by the results! I have some advice for diabetics! Always live by the glucose meter! If you experience large blood sugar spikes, avoid these foods. Stay away from addictive foods!!!

  5. There’s a Texas gal that is quite a low carb cook from the days when Atkins’s was on top. Buttoni’s Low Carb. I have followed her for years. She has been using almond and einkorn for over a decade I believe. She also uses a Bisquick-type mix that keeps my blood sugar from spiking. It’s been out there keeping the brittle diabetics (like me )happy with an occasional treat.
