McChicken Sandwich Recipe – (Mostly from KetoFocus)

SAUCE
• ¾ cup mayonnaise
• ¼ cup pickle juice
• 1 TBSP picante sauce
• 1/3 cup of Pickle relish
• ½ tsp of tartar sauce powder, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp salt
• Stir and leave in fridge for 20 minutes

CHICKEN PATTY
• Season with 1 tsp of salt, garlic powder, and onion powder
• Sprinkle ¼ cup almond flour on parchment paper
• Press the chicken patty into the almond flour
• Sprinkle the remaining almond flour on top of patty
• Whisk 2 eggs, and paint on top of patty
• Coat the patty/egg solution with crushed pork rinds
o Press coating firmly into the chicken patty
• Spray the entire surface with avocado oil
• Place another sheet of parchment paper on top and then flip over
• Repeat the egg wash to this side of patty
• Repeat the pork rind coating, and press in firmly
• Transfer onto a baking sheet
• Bake at 375 degrees (preheated) for 15 minutes.
• Broil on high for 4 minutes
• After cooking spread the sauce on the bottom of the buns
o You could do another layer of sauce on top of the patty
• Add layer of pickles if you like, and some shredded lettuce
• Then put on the top bun.

BUNS – For the buns you could use store-bought keto buns, if you trust them, but to be safe use chaffles.

  1. Interesting recipe from beginning to end. 🌿 Sad but true about all these added carbs. There are probably addictive elements in those fast food coatings. 🌿 Ai tells us the combination of fat, salt, and sugar in fried food coatings is scientifically engineered to trigger the brain’s reward system in a way that feels addictive.

  2. Thank you for the idea and testing it out. I’ll have to find a sub for pork rinds/panko. Just can’t stomach the smell or the taste. I was so hoping I could. I desperately want to move away from almond flour all the time. I gave the pork panko a try in another recipe and that did not work for me. I’m thinking maybe some parm cheese for the crispiness. I use that when I make chaffles and that does well. Just wondering if I took a chaffle I really like and blend it into bits how that might work as a coating. There’s a butter, garlic chaffle I love which for me would be a great bun. Will have to experiment with the coating though. Thanks again.

  3. We are all different. I am too lazy to do so much cooking, and too scared of diabetes and other health problems to eat at McDonalds. My solution is just plain shallow-fried chicken legs, mushrooms, sauerkraut, eggs with a little cayenne pepper and fenugreek powder. Tasty and SO few carbs.
